A new twist on one of life’s favorites❤️
8oz of lasagna noodles broken into pieces (about 10 noodles)
1 tablesp. Olive oil, plus more for drizzling
1 onion, chopped
4 Italian sausage links, casings removed and broken into lg pieces
3 cloves garlic, chopped
1 teasp of dried oregano
salt and pepper to taste
1 small can tomato paste
4 cups chicken broth
1 15oz can crushed tomatoes
1/2 cup chopped fresh basil
1/3 cup grated Parmesan cheese
1/3 cup+ heavy cream
Ricotta Cheese for topping on each bowl
Bring a lg. pot of salted water to a boil, Add the broken noodles and cook as directed. Once done, drain and drizzle with olive oil and toss till ready to add to soup.
At the same time as noodles are cooking heat 1 tablespoon of olive oil in Dutch oven or heavy pot over med. heat, add the onion and sauté until softened,about 3-4 mins. Then add the sausage ,garlic,oregano and sauté, as you breakup sausage with wooden spoon until browned. Add tomato paste ,chicken broth,tomatoes and 1 cup of water. Cover and bring to a simmer. Uncover and stir in noodles,fresh basil and parm cheese, let simmer for about 15 mins till slightly reduced then add heavy cream and simmer for about 15 more mins.
Once done divide into bowls and top with a dollop of ricotta cheese and olive oil drizzle. Serve with crusty bread ❤️ Enjoy!
