Easy Vegetable Lo Mein

imageA deliciously simple version of Chinese Lo Mein❤️


8oz Lo mein noodles

2 tables olive oil

2 cloves garlic,minced

2 cups cremini mushrooms,sliced

1 bell pepper (red,yellow or orange), julienned

1 carrot,julienned

1/2 cup snow peas

3 cups baby spinach


2 tables soy sauce(more or less to your taste)

2 teasp sugar

1 teasp sesame oil ( olive oil can be used if you prefer the taste)

1 teasp ground ginger


In small bowl whisk together soy sauce,sugar,sesame oil,and ginger , set aside

In lg pot of boiling water,cook noodles according to package,drain well

Heat olive oil in lg. skillet or wok over med. high heat. Add garlic,mushrooms,bell pepper and carrot. Cook, stirring frequently until all tender,about 3-4 mins. Stir in snow peas and spinach until the spinach has wilted,about 2-3mins.

Stir in egg noodles and soy sauce mixture, gently toss to combine. Serve Immediately❤️
