Whole Milk Ricotta Gnocchi

Equal amts of flour and Whole milk Ricotta cheese (use the large container of ricotta and use that container and fill it with equal amts of flour)

In medium bowl mix together cheese and flour slowly till soft dough ball forms. Turn ball onto floured counter and knead till dough is smooth. Place dough ball back into bowl, cover and chill in refrigerator for 15-30 mins. Once chilled cut dough into pieces and roll out into logs about 12 ins long and cut into 1″ pillows. ( keep dough covered between log rolls)  Repeat this until dough is finished and pillows are made.

Keep pillows ( gnocchi ) on floured counter if using right away and put them into boiling salted water all at once. (3-5 mins, done once they float to the top) If not using right away freeze on parchment lined cookie sheet in one layer till frozen , once frozen bag all together to use at a later date! Enjoy with sauce of your desire.❤️
