Simple and easy❤️ Perfect Lenten meal!
1/2 lb of thin spaghetti
3 tablesp extra virgin olive oil
3 tablesp Butter
3 lg. cloves of garlic, thinly sliced
1 lg. Lemon, zested and juiced
salt and pepper to taste
Grated Parmesan cheese
Red pepper flakes (optional)
Lemon zest and basil as a garnish
Cook pasta as directed in salted water. Once soft, drain and toss with alittle olive oil then set aside.
Meanwhile In large skillet over med. heat add oil and butter. Then add shallots & garlic and sauté for about 2-3 mins. or till soft. Once soft add the pasta, season with salt and pepper to taste and toss. Add lemon juice and zest ,toss for another minute. Remove from heat and transfer to bowl, garnish with lemon zest, generous amts of grated parm cheese, basil and/or red pepper flakes if desired. Enjoy ❤️
