Mom’s Zucchini Pie

imageMy mom made this pie when I was a teen and I always found it to be comfort food,I hope you like it as much as I do❤️


3 small zucchini – sliced and cut into small chunks

1 med. onion- diced

4 eggs

1 cup of Bisquick (add more Bisquick 1/4 cup at a time if mixture is too loose)

1/2 teasp black pepper

1 teasp salt

1/2 teasp garlic powder

1/4 cup of grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1/4 cup oil

1 teasp dried parsley flakes

Cook onion and zucchini in small amount of olive oil and water,sauté till slightly soft. Once soft drain any liquid and let cool. Once cooled add all the rest of the ingredients and mix throughly. Pour into greased 9″ deep dish pie dish and Bake @350 degrees for 40 mins. till browned and center is set. Enjoy!❤️

      Please try it! Mom made it so the boys would eat their veggies but I always loved it😊
