Potato Leek Cream Soup

imageA delicious start to a dinner…it was our first course at Easter dinner💕


approx. 2 lbs of waxy potatoes, peeled and cleaned

2 med. Stalks of leeks, mostly white part, cleaned and sliced into thin rings

1 stick butter

3 to 4 tablesp flour

2 cups half & half (plus more if needed)

2 cups of chicken broth (plus more if needed)

salt and pepper to taste

ln lg. Stock pot cook potatoes in salted water till tender,drain and return to pot…meanwhile in skillet melt butter and sauté leeks till tender, once tender sprinkle with flour and blend. Slowly add half & half blending all together smoothly till it thickens,if turns too thick add more cream and blend. Add salt and pepper to your taste.

Once cream leek mixture is to your liking and creamy, add to potatoes with the chicken broth, stir together. Now use emersion blender to bring everything together and blend till smooth. Add seasoning to your taste and serve warm with shredded cheddar cheese garnish and drizzled olive oil if desired!  Enjoy❤️
