Tried a new dish with a variation of broccoli that I found. It’s tender and just enough veggie for those little hands❤️
1lb. Small Shells
2 bunches of Broccolinii, washed,cleaned and cut into 1″ pieces.
1/4 to 1/2 cup olive oil
4 to 5 cloves garlic, thinly sliced
1/2 to 1 teasp red pepper flakes
1 teasp dried oregano
salt and pepper to taste
1 tablesp. fresh oregano leaves
3 to 4 tablesp fresh lemon juice (1 lg. lemon)
1/4 cup Parmesan cheese
Cook pasta in lg. pot of salted water till soft but firm
In lg. skillet heat oil and sauté garlic, red pepper flakes, oregano and broccolini till slightly tender or as you like it.
Drain pasta,(reserving 1/2 cup pasta water) and return to pot. Add oil/ Broccolinii mixture to pasta and toss to coat, season with salt and pepper to taste and then drizzle with lemon juice. (If more liquid is needed use reserved pasta water and /or more olive oil to taste) Sprinkle with fresh oregano and Parmesan cheese over pasta to top. Serve hot and Enjoy❤️
( note: you can add halved grape tomatoes and/or diced chicken also to this recipe and make even more fun!)
