A comfort food dish on a rainy day, hearty and filling!❤️
1 pound ground Turkey
1 (28 oz.) can diced tomatoes
3 cups turkey or chicken stock
1/2 cup dry red wine
3 cloves garlic, minced
2 small potatoes, peeled and diced
1 med.onion, diced
1 red bell pepper, seeds removed, diced
3 tablespoons olive oil
1 tablespoon Worcestershire sauce
1 sm. can tomato paste
1/2 tablespoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1/4 teaspoon red pepper flakes
salt and freshly ground pepper, to taste 1 lb med. pasta
Heat olive oil in a large pot or Dutch oven over medium-high heat and brown turkey Meat. Add onion,red pepper and potatoes to turkey and cook until softened about 8-10 minutes.
Stir in minced garlic and cook for another 2 minutes or until fragrant.
Pour in red wine and deglaze any bits from the bottom of the pot.
Cook until mostly evaporated, 5 minutes, then stir in turkey stock, tomatoes, tomato paste, paprika, cumin, oregano, Worcestershire sauce, red pepper flakes, salt and pepper. Mix well!
Reduce heat to low and simmer for 1 hour or until meat and veggies are tender.
Taste and adjust seasoning, if necessary. Cook pasta till soft but firm and add to turkey mixture, mix together well and let heat through in pot. Serve with chopped basil and fresh ripe tomatoes on top of each bowl. Enjoy❤️
