A childhood favorite, the dumplings make this dish, they are the best part❤️
2 lbs of chicken, diced and saute till tender (you can use leftover already cooked chicken,diced also)
3 tables olive oil
1 med. onion, diced
4 sm. carrots, diced
4 to 6 stalks of tender celery, diced
1 lg. russet potato, diced
1/2 a bag of frozen green beans, thawed and rinsed (cooked fresh beans can be used)
1/2 bag of frozen peas, thawed and rinsed (if desired)
3 cloves garlic, diced
1 teasp. onion powder
1 teasp. garlic powder
1 teasp. parsley
4 cups of chicken stock
1 cup milk
3 tablesp of flour
salt and pepper to taste
2 1/4 cups Bisquick baking mix
2/3 cup milk
1 tablesp dried parsley
If using fresh chicken, sauté with olive oil in pot until tender and browned (if using already cooked chicken just add oil and chicken together in pot and heat through) now Add diced onion, carrots, celery, potato and garlic, cook till tender. Add chicken stock and seasonings, bring to boil. Reduce heat and let simmer for about 30 to 40 mins. uncovered. Once simmered you can now add beans and peas to mixture and stir going on to next step.
While chicken mixture is tender in pot … separately, add milk with flour to a shaker and shake vigorishly then add it to hot chicken mixture and stir constantly till blended. Mixture should become slightly thicker. Season to taste with salt and pepper and/or chicken soup base for flavor. Let simmer for about 10 / 15 mins. all together.
In the meantime make Bisquick Dumplings, mixing all the ingredients together making sure parsley is incorporated evenly.
Now raise temp of chicken mixture and bring to slight rolling boil/ bubble, dropping heaping tablespoons of dumpling mixture onto hot boiling mix covering whole top of chicken mix in pot with dumplings. Now Cover pot and let cook for 10 mins. then uncover pot and let cook for another 10 mins. to let dumplings cook through.
Serve piping hot in soup bowls by putting one or two dumpling in bowl and covering them with chicken veggie mixture. Top with dried or fresh parsley and drizzle with olive oil. Enjoy ❤️
