Chocolate “Depression” Cake

imageThis delicious little chocolate cake is amazing, super moist and simple! It’s called a  “Depression Cake” because it was a cheap cake to make and was made primarily during the depression years when milk,eggs and butter were a luxury and budgets were tight. Desserts for them were made as special treats. My grandmother talked about those days and how hard it was raising children and trying to make ends meet. I think of her often with these recipes and wish she was here so we could have our talks❤️


1 1/2 cups flour

3 tablesp Cocoa

1 cup sugar

1 teasp baking soda

1/2 teasp salt

1 teasp vinegar

1 teasp pure vanilla

5 tablesp vegetable oil

1 cup of water

Grease 8 x 8 square pan then add all dry ingredients into pan and stir slightly till blended. Make three wells in flour mix, add vinegar to one, vanilla to another and oil to last. Pour water all over cake and blend it all together with spatula.

Bake at 350 for 35 mins, till toothpick comes out clean. Cool on wire rack and frost with homemade frosting, a dusting of confectionary sugar or any store bought frosting you desire. Enjoy and reminisce ❤️
