Where I live we have many delightful little Greek restaurants all around us! One of my favorite dishes in the restaurants is their Greek lemon chicken soup paired with a Greek salad. This is my attempt at making the Greek Soup, it was awesome!❤️
3 tablespoon olive oil
1 onion, diced
8 cups chicken broth
3/4 cup arborio rice
2 eggs, lightly beaten
2 cups cooked chicken, diced (rotisserie chicken works well)
2 lemons, juice and zest
2 carrots and 2 celery,diced small
Heat the oil in a pan over medium-high heat, add the onions, carrots and celery, cook until tender, about 10 minutes.
Add the chicken broth and rice, bring to a boil, reduce the heat and simmer until the rice is cooked, about 30 minutes.
Slowly pour 1 cup of the hot broth into the eggs while whisking and then slowly whisk the egg mixture into the soup.
Add the chicken, lemon juice and zest, cook till warmed through, about 5 minutes. Season with salt and pepper to taste. Garnish hot soup with alittle feta cheese. Serve with a warmed pita and a Greek salad. Enjoy❤️
