Rigatoni with Rustic Bolognese Sauce


imageI found this amazingly simple but delicious recipe in an old folder of recipes I have from my Gram, she made it for my grandfather with long thin spaghetti because that was his favorite pasta for everything but I tried it with short thick pasta and it turned out great. Try it you’ll love it❤️


1 stick Butter

1/2 lb of sliced prosciutto, cut onto chunks

1 lb lean ground beef or ground sirloin

6 thin carrots, diced

6 stalks of celery,diced

1 lg sweet onion, diced

4 cloves of garlic, chopped

2/3 cup red wine

1 jar of canned homemade crushed tomatoes or 28oz can of crushed tomatoes

1 lb of pasta (of your liking)

Over med. heat melt butter in lg. Heavy stock pot and saute the prosciutto for about 5 mins or till browned but not burnt! Add ground beef and saute till no longer pink using a spoon to break up lumps. Add carrots,celery,onion and garlic, saute till soft then add in wine and tomatoes.

Raise heat and bring to a slight rolling boil partially covered, then lower heat and simmer for about an hr. stirring occasionally. Add alittle water if the sauce starts to become thick and/or dry. Season with salt and pepper to taste.

Cook pasta according to the directions and once drained coat with small amts of sauce. Place in serving bowl and top with the rest of the Bolognese sauce, sprinkle with Parmasean cheese if desired. Enjoy❤️
