Farro & Sausage Stoup

Trying a new whole grain and I loved it! My first taste of Farro was in California while visiting my daughter, it was a cold salad at a wonderful Italian Deli in Santa Monica. I decided to try it in a warm dish and this is what I came up with❤️ Hope you like it!!

RECIPE:

1 cup whole grain Farro

3 tablesp olive oil

4 to 5 links of Italian sausage (casings removed and chopped into chunks)

4 cloves garlic, chopped

5 cups+ of chicken stock

1 bunch or 8oz bag of fresh spinach, roughly chopped

1 small can Italian diced tomatoes

1 tablesp dried basil

salt and pepper to taste

Put Farro grain In saucepan and cook with water as directed covered till done about 30 mins.

Meanwhile in lg. Dutch oven on medium, heat olive oil and cook sausage, breaking it up into chunks,until browned. Once sausage is browned add garlic and continue to  saute till garlic is soft, then add stock and bring to a simmer. Now add the cooked Farro, spinach, tomatoes and seasonings, let simmer for about 30 mins. Or until you like it’s consistency (soup like or stew like). Garnish with fresh basil and parm cheese even a drizzle of olive oil is tasty….Serve with crusty bread! Enjoy❤️
