Chicken Cacciatore over Homemade Pappardelle Pasta


Soooo good you won’t be able to stop eating! ❤️


2 tablesp olive oil

1 tablesp Butter

6 chicken thighs (boneless or bone in)

salt and pepper to season chicken

1 med. onion, chopped

3 cloves garlic, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

1/4 teasp. crushed red pepper

1 jar of marinara sauce (28oz) or cups of homemade sauce as you like

1 lb Pappardelle pasta

Parmesan cheese

fresh chopped cut basil

Heat olive oil and butter in lg skillet. Season chicken thighs on both sides with salt and pepper, add to skillet and brown on both sides. Once browned remove to separate plate. Now add onion,peppers and garlic to skillet and saute till soft, season with salt, pepper and crushed red pepper, stir in marinara sauce and add chicken back into skillet. Let chicken and veggies simmer in sauce for about 30mins.

Meanwhile as chicken simmers, cook pasta in lg. pot of salted water till soft, drain and ladle sauce and chicken over pasta in serving dish. Garnish with parm cheese and torn Basil. Serve with crusty bread and Enjoy!

    This is one of those meals that no matter how much there is to eat – those who get to enjoy it will want more and more …. the noodles are the perfect accent and could be a meal all by themselves … Bravo!
