Simple Southern Pulled Pork Sandwich

Many years ago we lived and worked in North Carolina, both of my girls were born there and it was a delightful time in our lives. While there we learned to love different southern foods especially pulled pork sandwiches! Have had many different versions but the simpler the better is my favorite….Here is my fav❤️

3 tablespoons paprika
1 tablespoons salt
2 teaspoons black pepper
½ teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 cup tomato paste
½ cup honey
¼ cup red wine vinegar
3 tablespoons olive oil
1 onion, rough chopped
3 to 3 ½ pounds pork roast, browned in skillet on all sides

Season pork with salt & pepper and brown with olive oil on all sides in lg skillet, once pork is browned remove pork and place in crock pot ontop of chopped onion, then pour 3/4 cup of water into drippings in skillet and whisk together then pour over pork in crock pot.

Now In a medium bowl, mix together the first six ingredients (all of the spices) with a fork. Pour in the honey, vinegar, tomato paste and 3 tablesps of olive oil and stir till well blended.
Pour the honey tomato mixture over all sides of the pork. It’s okay if it (or a lot of it) just drips down to the bottom.

Turn the slow cooker on to low and cook for 7 to 8 hours or until the meat is tender enough to be easily shredded with a fork.
Serve warm on toasted hearty bun with fixings like your favorite barbecue sauce, homemade cole slaw or cabbage salad. Enjoy with a very cold Beer.❤️
