Michele’s Tortellini & Sausage Soup


imageThis is my sister’s recipe! We made it for dinner one night while I was visiting and it was delicious so I decided to put it up for you all. It’s simple,hearty and delicious. Warms on a cold rainy day❤️


6 to 8 links of Italian turkey sausage, half spicy & half mild

3 tablesp olive oil

4 carrots, chopped

4 celery stalks (with tops), chopped

1 med onion, chopped

2 sm. Zucchini, sliced (optional)

1/2 Lb fresh snap green beans, broken into pieces

2  14 oz cans Italian whole plum tomatoes with juice, broken into pieces with hands

1 teasp garlic powder

1 teasp dried basil

1 bay leaf

salt and pepper to taste

8 cups of chicken broth or chicken stock + (add extra if needed)

1  20 oz bag of frozen cheese tortellini

Remove sausage from casings then qbrown sausage and onion with olive oil chopping into sausage into large chunks. Once sausage is brown and onion is soft, add Chicken stock, tomatoes and their juices (broken up with hands), carrots, celery, green beans, zucchini, bay leaf and seasonings. Let simmer for 30 to 40 mins or so making sure veggies are tender. Once veggies are tender add tortellini to soup and let cook till soft, if more stock is needed add as desired. Remove bay leaf and serve. Garnish with shredded Parmesan cheese. Enjoy with crusty bread for dipping❤️
