Ravioli with Fresh Pomadoro Sauce


A slight twist on fresh tomato sauce, cheesy pasta, veggie filled and scrumptious ❤️


1/4 cup olive oil

4 large Beefsteak tomatoes, chopped (6 to 8 plum tomatoes chopped works also)

1/3 of a small head of cabbage, sliced thin

4 cloves garlic, chopped

1/2 cup fresh chopped Basil

1/4 cup fresh chopped parsley

salt and pepper to taste

1/2 cup Ricotta Cheese, plus more for garnish

1 cup Parmesan cheese, plus more for garnish

1 lb frozen mini Ravioli or homemade sm. Ravioli

Heat olive oil in Dutch oven, add cabbage and garlic, saute till softened and fragrant. Add tomatoes, basil, parsley and salt & pepper to taste. Let simmer for 15 to 20 mins. to blend flavors, then stir in ricotta and parm cheeses till creamy. Meanwhile in lg pot cook pasta as directed till done then drain, reserving out 1 cup of pasta water. Mix pasta in with sauce and add small amts of reserved pasta water if needed to keep everything creamy. When serving garnish each dish with a dollop of ricotta, sprinkle with parm cheese and a drizzle of olive oil. Enjoy❤️
