A simple pasta dish with lots of flavor! I remember my grandmother serving a lot of dishes like this with her famous romaine lettuce salad and some kind of awesome bread❤️ I made foccicia bread with tuna, herbs and olive oil on top to serve with my dish….Bravo!
1 lb long pasta ( spaghetti,linguine,bucatini…)
1/4 cup extra virgin olive oil +
3 garlic cloves, minced
1/4 teasp red pepper flakes (more if you like it spicy)
2 6oz cans of Tuna packed in Olive Oil
1 bag, box or bunch of baby arugula
calamata olives (as many as you like)
salt & pepper to taste
Shredded parm cheese to garnish
Cook pasta as directed till soft but still alittle “al dente”. While pasta is cooking sauté in large skillet, the garlic and red pepper flakes in olive oil till fragrant, add tuna and its oil breaking tuna up with fork. Season with salt & pepper and keep warm over low heat till pasta is ready. Just as pasta is ready reserve out a cup of the boiling water to add back to the pasta dish once combined with tuna.
Drain the rest of the water from the pasta, toss with tuna and garlic. Add the arugula and olives, toss all together with tongs. At this time add the reserved pasta water and extra olive oil to loosen the pasta. Toss together well, garnish with salt, pepper and parm cheese. Serve immediately! Enjoy❤️
