Pork Tenderloin with Fennel & Apples

image While we were on vacation in Virginia I made this Pork dish for my daughter and her family,  its sweet, savory and so juicy. I served it with Homemade applesauce and a huge lettuce salad….everyone loved it, even my grandson said he wanted more “chicken”😌 I love that❤️


1/4 cup extra virgin olive oil

7 cloves garlic, chopped

2 tablesp dried sage

salt and pepper

3 Granny Smith apples, peeled and cored

3 med. fennel bulbs,trimmed and cut into slices

2 tablesp lemon juice

1 boneless pork tenderloin, approx. 3 to 4 lbs

In a small bowl mix oil with garlic,sage, salt and pepper, set aside. Slice apples and fennel, place into 9 x 13 baking dish, toss with olive oil and 1 tablesp lemon juice. Now rub the pork all over with the sage oil you prepared earlier. Place ontop of the fennel Apple mixture. Roast at 450 degrees for about 30mins until pork is golden brown. Cover, reduce oven temp to 350 degrees and continue roasting for about 1 hr. (depending on size of roast) Or till meat temp reaches 145 -160 degrees. Once done transfer to cutting board and let rest for 5 mins then slice crosswise. In the meantime place the Fennel Apple mixture onto the bottom of a platter, top with pork slices and a thinly sliced Apple as garnish. Serve immediately and enjoy with homemade applesauce🍎

    There is never a dull or boring dinner around here – this pork meal is delicious; the flavors (fennel / apples / pork etc) will make your mouth dance with delight …. mmmmmmm gooood! Bravo!!!
