Tortellini with Goat Cheese & Roasted Vegtables

imageimageAnother simple creamy delicious dish. The goat cheese and olive oil from the roast veggies becomes the sauce thats tangy and velvet creamy all in one bite. Pair it with whatever sturdy pasta you like and you’ll love it! This day we picked tricolor tortellini and summer in season veggies and it was amazing… Alittle like grownup Mac and Cheese ☺️

Recipe:

1 lb of cheese tortellini pasta (any sturdy or filled pasta will do)

3 colored bell peppers (I use yellow,orange and red), large chopped

3 slender zucchini, large chopped

1 large sweet onion, large chopped

3 garlic cloves, chopped

olive oil

salt & pepper

fresh basil & parsley

6 oz. Goat cheese

About 1 cup shredded mozzerella for topping

Take large baking pan with sides and line with foil, place chopped veggies, onion and garlic onto pan and coat with good amounts of olive oil, salt and pepper. Place uncovered in a 400 degree oven and let roast turning at least once till soft and tender, for about 30 mins to 1 hr. (depending on the veggies you use, in the winter I use winter squashes and potatoes etc etc…) Once veggies are almost done start cooking the pasta as directed and have them hot and ready once the veggies are done to your liking. Now In a large bowl place pasta and pour veggies and all their juices over the pasta, cut up the goat cheese and put in bowl with all the hot ingredients and toss all together. The cheese will melt as you toss carefully and make the sauce. Add salt & pepper to taste if needed. Top with fresh basil & parsley chopped (if desired) and lots of shredded mozzarella cheese. Serve Hot and gooey❤️ Enjoy!

      Oh I’m so excited!!! I hope he likes it❤️ I made it for my Alicia while I was in CA. Cause her favorite food is Mac & Cheese but she never eats it cause it’s too fattening😊 So we did it Gourmet. Please let me know how it goes and thanks for following me along.
