Cavatappi Pasta with Zucchini,Sweet Onions & Spicy Sausage


Just a quick pasta dish made with inseason fresh zucchini, sweet vadalia onions and some yummy spicy Italian sausage. The flavor is amazing and has been a favorite of mine every summer at this time☀️ You can use any kind of pasta you love,add different veggies and even leave the meat out and make it vegetarian! It’s a very versatile recipe but this is my special way❤️


1 lb of Cavatappi pasta (or any short pasta of your liking)

4 med. slender Zucchini, chopped in lg. chunks

1 large Vadalia onion, quartered and sliced

3 garlic cloves, minced

3 tablesp extra virgin olive oil

1 can Italian seasoned diced tomatoes

6 spicy Italian sausage links, casings removed and broken into lg. chunks

salt and pepper to taste

1 tablesp dried Italian seasonings

In large skillet heat olive oil, add sausage chunks and sauté till browned then add zucchini, onion and garlic stirring occasionally till they have softened. Now add seasonings and diced tomatoes, rinsing can with small amts of water and add it to mixture. Cover skillet and let simmer till all is tender, stir adding salt & pepper and drizzles of olive oil to help all the flavors come together and taste is to your liking! In the meantime cook pasta as directed reserving out 1 cup of pasta water (to help with consistency of pasta dish if needed) strain pasta then add to zucchini mixture and season more if desired. Place immediately in large bowl and serve hot, garnished with fresh Basil and grated Parmesan cheese. Enjoy!❤️

    This sounds like a nice quick dinner for a weekend night when I don’t know what to make. There’s a farm up the street from us and their produce is awesome, I’ll have to try this one out!
