Italian Stuffed Red & Green Bell Peppers


These homegrown peppers might not have been perfect in shape but they looked so amazing that I had to buy them! The farmers market was full of their bright shiny colors so I decided I was going to make my wonderful stuffed peppers. The recipe Is full of flavor with homemade sauce, fresh seasonings, ground beef, brown rice and cheese. It was one of the first dishes I made for my husband when we were just married, the recipe has evolved through all these years, it’s gotten better and I’d like to think we have to. Hope you enjoy them as much as we do❤️


4 large green and red bell peppers, cut off tops and remove seeds (you can stuff the whole pepper or cut them lengthwise in half and lay flat to stuff)

1 pound ground beef

1 cup cooked brown rice

1 cup homemade or store bought pasta sauce for beef mixture, plus more sauce to put into prepared baking dish to go under & ontop of peppers

1 teaspoon dried Italian seasoning

fresh chopped parsley and basil

salt & freshly ground black pepper to taste

2 cloves garlic, minced

1/4 cup+ freshly grated Parmesan cheese

Preheat oven to 350 degrees. Spray a lg. baking pan with cooking spray. Cook rice till done according to directions and set aside. Now cover bottom of baking dish with pasta sauce and arrange empty peppers to fit, drizzle them with olive oil and place into oven and let bake for 20 mins to soften peppers slightly. In the meantime in large skillet brown ground beef till done, then add cooked brown rice, Italian seasonings, salt, pepper, garlic, Parmesan cheese and 1 cup sauce. Saute mixture till well combined.

Take baking dish with peppers out of oven and now divide meat mixture evenly among the Peppers. Spoon more sauce onto the tops of the meat mixture that you added into the peppers, season with salt and pepper. Cover tightly with foil. Bake until the peppers are tender and knife goes though the pepper with ease about 30 mins to 1 hr.
Remove dish from oven. Remove foil and top each pepper with more Parm. cheese.
Garnish with chopped parsley or basil if desired! Serve Hot and Enjoy❤️
