Shrimp with Pasta, Peas and Lemon Oil


This pasta dish is so delicious I hope you will at least try it once. A great summer dinner that’s simple to make and so healthy with all the fresh veggies out there this time of year. Enjoy ❤️


1/2 cup extra virgin olive oil

1 lemon, zested

*(Combine the oil and the lemon zest in a small bowl and set aside and let fuse.)

1 lb. long pasta of choice

3 tablesp olive oil

2 shallots, diced

2 large tender celery stalks, chopped on bias

8 ounces of fresh snap peas

2 garlic cloves, diced

1 lb. fresh or frozen shrimp, tails off

Juice of 2 lemons

1 lemon, zested

salt and pepper to taste

1/4 cup fresh chopped parsley

Bring a lg. pot of salted water to a boil, add pasta and cook as directed. Once pasta is tender, drain and reserve out 1 cup of pasta water to use if needed for consistency. While pasta cooks, heat olive oil in large skillet and add shallots, celery and garlic, cook for about 3-4 mins till tender but crispy and fragrant, stirring occasionally. Add shrimp and cook till pink, about 5 mins., then stir in snap peas to mixture. Add cooked pasta, lemon juice, lemon zest, salt & pepper to taste, Toss. Now add the lemon infused oil and toss to combine. If needed add small amts of pasta water to desired consistency. Garnish each dish with chopped parsley and serve hot!
