Chicken Salad with Grapes & Cashews

imageimageEverytime I make this salad it’s a hit! On a flaky buttery croissant it truly is even better❤️ Try it on a hot summer day, it’s easy and delicious with fresh fruit and a cold drink. Hope you enjoy it!

Recipe:

1 rotisserie chicken, pulled from bones and cut up into chunks

1/4 lb+ salted cashews, broken in half

1/2 lb green grapes, sliced in half

1 tablespoon orange juice

1 teaspoon nutmeg

Mayonnaise  (as much as you like to moisten the chicken and make the salad to your liking)

salt & pepper to taste

Once chicken is chopped put in bowl with grapes and nuts, toss together with orange juice & nutmeg then mix all together with mayonnaise and salt & pepper till its creamy and tasty to you, it’s ready!!! Serve cold on a soft bun, a buttery croissant or in a ripe flavorful tomato with fresh fruit in season! Enjoy🍓

    A family favorite, this chicken salad is great served as pictured or “right out of the bowl” ……. light, refreshing and between the sweet crisp grapes and the crunch of the cashews, a diner gets to enjoy and taste a world of different flavors in this “need to try” chicken salad! mmmmm good!
