Recently I made some Italian stuffed peppers as you can see from a previous post, they were amazingly full and delicious but I did have some leftover stuffing that I saved and just decided to be like my grandmothers and use my leftovers to make another great meal as they did so many times before. So Here it is….Stuffed Pepper Soup❤️. I softened a newly chopped green pepper, added the extra stuffing with some other tasty ingredients and made this spicey soup for dinner. It’s my first attempt at the soup and I’m thrilled with the results. Top it with some sharp cheese or anything you might like and it’s yours!
Here is a basic recipe for you but you need to make it your own when working with leftovers because nothing is ever the same twice…. Have fun!
1 lb lean ground beef
2 Tbsp olive oil
Salt and black pepper
1 small yellow onion chopped
1 chopped green bell pepper
2 cloves garlic, minced
1 lg. can petite diced tomatoes
2 cups homemade or jared Italian tomato sauce
2 cups+ chicken broth
2 Tbsp chopped fresh parsley
1/2 tsp dried basil
1/4 tsp dried oregano
1 cup uncooked long grain white or brown rice
1/4 tsp dried red pepper flakes, optional if desired
In a large pot, heat olive oil over medium heat, once hot add beef to pot and season with salt and pepper. Cook until browned stirring while breaking up beef.
Now add onions and green pepper, sauté till soft then add garlic and sauté alittle longer. Pour in diced tomatoes, tomato sauce, broth, parsley, basil and oregano then season with salt & pepper (red pepper flakes if desired) to taste. Bring just to a light boil and then reduce heat, cover and simmer, stirring occasionally, 30 to 40minutes.
While soup simmers, prepare rice according to directions then once soup is done simmering stir in cooked rice and let simmer alittle longer till flavors come together and soup starts to thicken. Serve hot and garnish with cheese if desired.
