Pasta in Vodka Sauce with Tomatoes & Basil❤️

I’ve made this pasta recipe many different ways and each time it’s better than the first! What ever kind of pasta you use, short or long, homemade or store bought it will be delicious….it’s that awesome sauce that makes it work😋

Recipe for sauce:

3 tablesp extra virgin olive oil

1 sweet onion, chopped

3 cloves of garlic, chopped

1 sm. can tomato paste

2  15oz cans of Italian seasoned diced tomatoes (or) 1 lb+ of freshly chopped plum tomatoes with there juice

1 cup Vodka of choice

salt and pepper to taste

1 tablesp Italian seasonings

1 cup Heavy Cream

1/2 cup grated Parmeasan cheese

A handful of fresh Basil leaves, torn

1 to 1 1/2 lb of fresh or store bought, long or short pasta of choice

Heat the olive oil on med. and saute chopped onions till tender, then add in garlic and cook till fragrant.

Now add tomato paste, salt, pepper and Italian seasonings to coat onion & garlic. Stir in diced tomatoes, along with 2 cans/ cups of water and the cup of Vodka… Continue to stir all together till smooth and let come to a boil, reduce heat and let simmer for 15-20 mins till sauce comes together and thickens slightly.

Meanwhile cook pasta till al dente and stain…at the same time remove sauce from heat and slowly stir in heavy cream and Parmeasan cheese. Immediately add to hot pasta and toss together, season with more pepper as desired and stir in fresh Basil. Garnish with  a bit of torn basil and more cheese if desired. Bravo❤️
