Spicy Arugula and Pearl Couscous Salad

Lunch!❤️

1 bunch Arugula

1 cup Pearl Couscous

2 tablesp lemon juice

1/2 teasp Dijon mustard

1/4 cup extra virgin olive oil

salt and pepper to taste

1 ripe tomato,diced

1 small tender cucumber

4 large ripe strawberries, thick sliced

1 handful golden raisins

1 sweet red bell pepper, diced

1 handful of pistachios as garnish

Balsamic Vinegar for drizzle

Cook couscous as directed till puffed and soft about 8mins. Drain what water is left, rinse slightly and allow to cool, then put cooled couscous into large bowl, set aside.

Whisk together the lemon juice and mustard while drizzling in the olive oil. Once emulsified season with salt and pepper to your taste.

Now add everything together with the couscous…the tomatoes, raisins, strawberries, cucumbers, red peppers and arugula pour the dressing over the top, Toss and season with salt &  pepper if needed. Plate the salad….Drizzle with balsamic vinegar and top with pistachios. Serve immediately with toasted Bread or Bagel! You can make this salad your own by adding whatever else you love…enjoy it❤️
