Panzenella Salad with Sweet Red Peppers & Chicken (Italian Bread Salad)

About a year ago I went to this awesome hands on cooking experience, it was in a real Chefs kitchen where you make a dinner from beginning to end and then once all is ready you sit down to eat what you’ve made with all the other classmates. It was an amazing experience, having everything you needed right at your fingertips and even someone to cleanup after you😋. There was 6 people in the class including myself as we went from station to station making each part of the meal! A Panzenella Salad was one of the dishes we made and here it is ….I just added Chicken to the dish this time to make it a main course. Homemade Foccocia Bread cut into lg. chunks and baked till crusty but tender inside, red peppers & chicken sautéd and seasoned till perfect, tossed together with extra virgin olive oil. It’s magnificent❤️ Ciao

1 lb of Heirloom grape tomatoes, sliced in half
2 teaspoons salt & pepper, plus more for seasoning if needed
1 loaf of homemade foccicia bread, roughly cut into about 1 1/2-inch pieces (approx 6 to 8 cups bread pieces )
Extra Virgin olive oil, divided for coating bread and dressing salad
2 medium cloves garlic, minced
2 med narrow sweet red peppers, sliced into strips
2 tablespoons white Balsamic vinegar or more as to your taste
1/2 cup packed basil leaves, roughly chopped for salad and alittle for garnish
Approx. 2lbs Chicken tenderloins sautéd and seasoned well, cooked till tender and juicy (try not to over cook them)
Fresh mozzerella cut into cubes for garnish also if desired.

Preheat oven to 350 degrees. In a large bowl, toss bread pieces with olive oil and some salt & pepper then transfer to a foil lined prepared baking sheet. Bake until crispy & lightly browned for about 15 minutes turning pieces at least once. Remove from oven and let cool.

While bread is baking, saute peppers and garlic with olive oil till slightly tender then remove from pan, set aside. Now add chicken to pan and saute till tender, season with salt & pepper to your taste, do not over cook! then remove and cut into pieces.

Now in lg. bowl combine, toasted Bread pieces, halved tomatoes, garlic, peppers, Basil and Chicken, drizzle with olive oil and small amts of the white balsamic at a time, toss together and season to taste with more salt and pepper if needed. Let rest for a bit and toss again till all is well coated. Garnish with basil leaves and fresh mozzarella. Serve with some cool fruity wine and Enjoy!!
