Lemon Shrimp over Arugula & Avocado🍋 with crispy Pita Chips



A wonderfully easy salad with lots of flavors, alittle spicy & tangy, creamy with alittle crunch when shared with homemade Pita Chips! Try it you’ll love it, healthy and lowfat🍋

1 lg. Lemon juiced (about 1/4 cup) and grated for the lemon zest
Lg. (6 to 12 oz) bunch of cleaned Arugula
Salt & Pepper to taste
2 lg. Garlic, minced
1/4 cup plus 1 tablesp extra-virgin olive oil
1 pound medium shrimp, shelled and deveined
1 lg. Avocado, sliced
In a large skillet, heat 1 tablesp of olive oil. Add the shrimp & Garlic ,cook over med. high heat, stirring constantly until shrimp begins to curl, about 3 minutes, season with salt and pepper. Once the shrimp is cooked through and garlic is soft set aside. Take Arugula and toss well with Lemon juice & lemon Zest, the rest of the olive oil and salt & pepper to taste. Now plate salad and top with shrimp and sliced Avocado. Garnish with shaved Parmesan cheese and serve with crunchy Pita Chips. Enjoy! 🍤

Homemade Pita Chips

Triangularly slice lg. Flour Tortillas and place them on a foil lined, cooking spray prepared baking sheet. Spray tortillas with cooking spray on both sides and season with salt & pepper. Bake in a 350 degree preheated oven, turning once to brown both sides, about 10mins. Watch carefully to not burn…should be light brown and crispy.
