Tortellini en’ Brodo

img_3042img_3041This tortellini soup is a favorite here and when fall comes it’s always better on a cold, windy day…add a little spicy sausage and you’ll love it even more!❤️


1/3 cup olive oil

4 to 5 garlic cloves, diced

1 lg. bunch scallions, thinly sliced (white and green parts)

3 lg. carrots, diced

3 lg celery stalks,diced

1 lg. can diced tomatoes or 2 cups diced fresh plum tomatoes

2 mounded tablesp. chicken flavored soup base

1 pkg. frozen cheese filled tortellini

1 lg. Bunch of Escarole or Swiss Chard (your preference), cleaned and chopped

1 lb. Italian sausage (if desired), crumble into lg pieces

1/4 cup chopped fresh parsley

1/4 cup chopped fresh basil

Salt & Pepper to taste

1 tablesp dried Italian seasonings

Grated parmesan or shredded mozzarella cheese to garnish

In lg. sauté pan heat oil over med. heat and sauté sausage, onions, garlic, carrots and celery till cooked through & tender, stirring constantly. Now add in tomatoes with there liquid and the greens, simmer for about 15 mins. as greens wilt with the liquids.

Meanwhile in lg. stock pot heat 8 to 10 cups of water, add in soup base, herbs and seasonings, stir and let simmer for a few mins. Now taste the Brodo to make sure it’s flavorful, then add in vegetable / sausage mixture from saute pan and season with salt & pepper if needed, let it continue to simmer for 20 mins to combine. Once the Brodo has come together and is to your liking raise the heat to allow it to come to a rolling boil and add the tortellini, turn heat back down and let soup simmer for another 20 mins till pasta is soft & tender. Garnish each bowl of soup with cheese and Serve with bread to dip!! 😋Enjoy
