Homemade Tomato Cream Soup🍅

🍂 In the house I had some plum tomatoes that were really ripe and I needed to do something yummy with them so they wouldn’t go to waste…this is what I came up with!  The Soup was warm, scrumptious and satisfying on one of our first really cold evenings of fall. I hope you try it 🍃

6 to 8 ripe plum tomatoes with seeds and juices (or) 2 cans chopped diced tomatoes
1/4 cup extra virgin olive oil
Salt and freshly ground black pepper
1 stalk celery, diced
1 small carrot, diced
1 sweet onion, diced
2 cloves garlic, minced
1 1/2 cups chicken broth
2 tablespoons butter
1/4 cup chopped fresh basil leaves
1/2 cup heavy cream

In a saucepan, heat olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the chopped fresh or canned tomatoes and there juices, chicken broth, salt & pepper and butter. Simmer until vegetables are very tender and taste is to your liking, about 15 to 20 minutes. Now add the basil and cream. Puree with a hand held immersion blender until smooth! Season to your tastes and top with croutons and a drizzle of olive oil. Serve with your favorite grilled cheese sandwich or just some hearty bread…. 😊 Enjoy
