Grandma’s Pasta and Zucchini❤️

img_3081img_3080This is one of those dishes I watched my grandmother make over and over again with all that Zucchini that she harvested from her garden….It for certain has became a favorite comfort food for me throughout my whole life!  There is no real recipe for it and it may come out alittle different everytime but it’s always warm and yummy😊 A very simple old world dish and I will forever think of you Gram each time I make it ❤️thank you for all the love always!

Ingredients for the dish I made:

About 4 med. Zucchini, chopped into lg. Chunks

1 lg. Sweet onion, chopped

4 lg. Garlic cloves, chopped

1 can Italian seasoned diced tomatoes (or 1 jar of homemade canned tomatoes, diced)

Extra virgin olive oil

italian seasonings to taste

salt and pepper to taste

Parmeasan cheese

1/2 to 1 lb. Ditalini Pasta or any small pasta (the amt. of pasta depends your amt. of Zucchini mixture, you judge😊)

In lg. skillet sauté Zucchini, onion & garlic with olive oil till soft then add diced tomatoes and the seasonings to your taste. Let simmer for 20 mins or longer to blend flavors. Meanwhile cook pasta as directed and drain, reserving out about a cup of pasta water. Add drained pasta into Zucchini mixture and stir together, add alittle of the reserved pasta water at this time if needed to keep the dish moist and creamy. Let the mixture heat through, add more salt & pepper to taste if needed. Once the flavor is to your liking top with parmeasan cheese and serve hot. Enjoy with a crisp salad and that perfect glass of your favorite wine😋 Ciao

    We have identified many, many recipes in this blog as being “comfort food” …. this meal is the epitome of comfort food – delicious, satisfying and truly a food for nearly every occasion, this is the classic “feel good” meal. Buon pasto!!!!
