Creamy Honey Apple Pumpkin Soup



Just had to try making this soup! I’ve enjoyed many versions of pumpkin soup because it’s one of my favorite flavors but mixed with the spices, the apples and the sweetness of the honey it makes this soup spectacular❤️ Drizzle a little pumpkin seed oil on top and garnish with toasted pumpkin seeds and you’ve got a bowl of deliciousness.


1 pie pumpkin, cored & seeded

olive oil

salt & pepper

2 stalks of celery, chopped

1 med. sweet onion, chopped

2 med. apples, peeled & chopped

A heaping tablespoon of Honey

1/2 teasp allspice

1/2 teasp pure vanilla

2 dried bay leaves

4 sprigs of thyme, chopped

3 tablesps flour

2 cups chicken broth/stock

2 cups Apple Cider

1/2 cup Heavy Cream

pumpkin seed oil and roasted pumpkin seeds as garnish

Cut pumpkin in half drizzle with olive oil and season with salt and pepper. Place flesh side down on prepared baking pan with small amts of water and bake for 30 mins till tender. Once done scrape flesh from peel and set aside.

Add chopped celery, onions and apples to stockpot with olive oil, season with salt & pepper and sauté on med. heat till tender, stirring frequently. Once tender stir in Honey, allspice, vanilla, bay leaves, thyme and pumpkin, mix all together then add flour stirring as all becomes combined for about 1 min. Now add broth and cider, stir. Bring to a slight boil then turn down heat to low and let simmer for 30 to 40 mins. Discard bay leaves. Puree mixture using an emersion blender till smooth! Stir in Cream and let heat through. Garnish with a drizzle of pumpkin seed oil and roasted pumpkin seeds. Serve hot with your favorite sweet bread❤️ Enjoy!

      Yes sure you probably could because you puree everything in the end, just make sure you drain the pumpkin well if it has developed water on the top when u open the can, you just want to add the pumpkin flesh.
