Potato Leek Soup🍵

img_3227img_3226As you can see from reading my blog, I love making soup and this is just another deliciously smooth & creamy one! It was wonderful on this cold December day “just hits the right spot” as my husband says. Try it and enjoy its simplicity!

2 tablespoons butter, or more if needed

2 tablespoons olive oil

3 leeks, cleaned and chopped

6 potatoes, peeled and cubed

4 cups chicken broth

1 cup Heavy Cream

4oz shredded Cheddar cheese, optional

salt and fresh ground black pepper to taste

Melt butter in a lg. pot then add in olive oil over medium heat… add leeks and saute until tender. While leeks are cooking add chopped potatoes to a pot of boiling salted water and cook till soft. Once potatoes are soft drain out most of the water but do not strain potatoes, then add the chicken broth, leeks and some seasonings to the pot of potatoes. Let soup simmer for about 15 / 20 mins. and taste for deliciousness. Once ready, take an emersion blender and blend till all is smooth.
Now that soup is smooth pour in the Cream, stir slowly and continue to simmer until slightly thickened, about 15 minutes more.
Stir in Cheddar cheese if desired and let it melt, add salt & black pepper if needed to taste. Enjoy❤️
