Bucatini Puttanesca

img_3279img_3275I cannot begin to tell you how delicious this dish was ❤ It’s a very basic sauce with intense flavor and a spicy bite! The actual pasta has always been a favorite of mine because it’s thick & hallow but when tender it is so prefect for grabbing up any simply delectable sauce. So for now just make sure, together with the pasta, you have a loaf of crusty bread and a glass of your favorite wine beside you🥖 🍷 Please Enjoy! …. you’ll love it!

2 tablesps olive oil

4 cloves garlic, chopped

1/2 cup lg. pitted Kalamata olives, quartered

1/2 cup lg. pitted Italian style green olives, quartered

3 tablesps capers

1/2 teasp red pepper flakes

1 can 28oz san marsano diced tomatoes packed in puree (or any tomatoes of your choice packed in puree)

Sprigs of fresh basil 🌿

Dried oregano

salt & pepper

1 lb. Bucatini pasta

Grated Parmesan cheese

In lg. Saucepan over medium heat place garlic and saute till fragrant, then add in olives, capers, red pepper flakes, oregano, basil and tomatoes. Bring mixture to a slow boil and turn down to simmer for 20/30 mins. Meanwhile bring lg. Pot of salted water to a boil, add pasta and cook until tender but still firm. Drain pasta and toss with the sauce. Plate pasta in individual bowls and top with additional pepper flakes (if desired), grated Parmesan cheese and freshly torn Basil.  Ciao❤
