Mascarpone Pasta with Spinach❤

img_3300img_3298After a long week away and little time for myself I came home and decided to put together a quick pasta dish that’s easy and delicious just for me to sit and enjoy while I watch my favorite show. Put lots of cheese on it, have a glass of wine and start the fireplace, it’s yummy😍

1 lb. pasta of choice, long or short

8 oz. mascarpone cheese
1 lemon, juice only
salt & pepper
1 teaspoon nutmeg
1 bag of baby spinach
1/2 cup Parmesan Cheese

Cook pasta in salted water until done

Stir together mascarpone, lemon juice, salt, pepper and nutmeg.

When pasta is done, reserve about 1 1/2 cups of the pasta water

Drain pasta and add back to pan. Pour mascarpone sauce over pasta as well as about 1/2 cup of pasta water. Stir pasta and sauce over low heat till creamy, now add Spinach in with pasta and continue stirring until spinach is wilted

Sauce should thicken as it cooks, if it is too thick than add more pasta water to loosen. Sprinkle with Parmesan cheese, blend together and serve immediately while hot😘 Enjoy!

    I had this meal for lunch today …. mmmmmm good does not adequately describe this warm, cheesy, deliciousness. Enjoy this with the family, at work or anywhere … it IS a delightful, delicious pasta dish!
