Steamed Mussels with Garlic Broth❤

img_3343img_3346A Special treat one evening with my Darling to celebrate his day off❤

Lg. Bag of fresh Mussels, cleaned and rinsed well

4  to 6 large cloves of garlic, chopped

extra virgin olive oil

2 cups of chicken broth

4 chopped fresh ripe Roma tomatoes with there juice or 1 can Italian diced tomatoes

1 teaspoon dried Basil

parmesean cheese

Sauté garlic in lg. pan with olive oil till fragrant and soft, do not burn! Add broth,tomatoes and basil, cover and bring to a rolling boil. Add in cleaned Mussels and cover. Turn heat down slightly and let boil till all Mussels have opened (discard any that have not).  Finally pour Mussels and the Broth into a lg. bowl, drizzle with a bit more olive oil and top with grated Parmesan cheese ❤  As I did, serve them with homemade Focaccia Bread for dipping or any other crusty bread you love …. it’s amazing!!!! Ciao

    This meal will make anyone take more days off … this is so delicious. I cannot adequately describe the good feelings that are a part of knowing how special many of our meals have become throughout the years.
