Pierogies with Cabbage, Tomatoes & Onions 🍀

IMG_3440IMG_3442Happy St. Patrick’s Day everyone! Instead of the regular corned beef and cabbage this year I decided to make our dinner a little different! 🍀 I’ve made this recipe many times with both fresh made or frozen pierogies and the dish turns out amazingly delicious with either one, hope you’ll try it any day of the week not just this day because you see no matter what your nationality is or how you make  your Cabbage & Potatoes, everyone is Irish on St. Patrick’s Day

1 tablesp butter
2 tablesp olive oil
Tablespoons of Warm water
1 lg. Sweet onion, sliced thick
4 cups or 1 med. head of cabbage, sliced
1 can seasoned diced tomatoes, with juices
1 package of frozen potato stuffed pierogies or any type you love…(you can use homemade pierogies but I would first sauté them separately with butter and then put them in with the onion, cabbage mixture last and stir together gently)
Salt and freshly ground pepper to taste

Heat oil & butter in skillet on med. Add sliced cabbage and onion, season with salt & pepper, cover, lower heat and let sauté till tender, at this point add small amts. of water to the skillet to help steam veggies… stir frequently, do not let burn! Once veggies are tender add in diced tomatoes and stir. Top mixture with frozen pierogies and cover skillet again to let pierogies steam & thaw, about 10 minutes. Once everything is tender and cooked to your liking, fold all together GENTLY, add more salt and pepper to your taste if needed as all the flavors come together. Serve hot and steamy!!!☘️

    Everyone IS Irish on St. Paddy’s Day …. This is the perfect dinner with which to celebrate!!!!
