I don’t even know where I got this recipe but when I found it tucked into another recipe book and written on it was “Delicious”, I decided to try it again! Well it was amazing! My Husband couldn’t get enough😋 With a good bottle of wine and a romaine salad we enjoyed a romantic dinner for two❤
8oz. Pasta, linguine(fresh or store bought)
1 cup Zesty Italian dressing (or any Italian dressing of your liking), divided
the juice of 1 lemon
2 cups fresh Mushrooms, sliced
1 med. sweet onion, sliced
1 bag frozen package of artichokes(thawed)
1 lb. fresh cleaned large shrimp
1 tablesp. chopped parsley
1/4 cup grated Parmesan cheese
Cook pasta as directed (I used freshmade linguine for the recipe shown). Meanwhile heat 1/2 cup dressing in lg. Skillet on medium. Stir in Mushrooms, onion, lemon juice and artichokes, cook until all are tender, stirring occasionally. Now add in cleaned shrimp and cook till pink, add parsley, salt & pepper to taste if needed.
Drain pasta and return it to the pot, add shrimp veggie mixture and remaining 1/2 cup of dressing, toss lightly and sprinkle with parm cheese. Drizzle with olive oil. Serve immediately!
