Chicken Bruschetta on top of Saffron Rice

IMG_3519IMG_3518I am so trying for our health to be a good girl this year and not make as many high carb, high calorie meals. This recipe happens to be one of those, it’s simple, full of flavor and low in calories. I promise to still have some of those yummy decadent comfort foods at times but I am searching for really flavorful healthful “good for us” meals…follow me and see what I come up with💕

2 large boneless, skinless, chicken breasts, halved horizontally to make 4 fillets
3 teaspoons Italian seasoning
2 teaspoons minced garlic
salt & pepper to taste
2 tablespoon of olive oil

Manzanilla green olives, as many as you desire sliced in half
About 4 lg. Roma tomatoes, roughly chopped
¼ of a red onion or whole small shallot , chopped
4 tablespoons shredded fresh basil
2 tablespoons olive oil or more to taste
salt & pepper to taste

freshly shaved parmesan cheese, optional
Balsamic vinegar for drizzle, optional
Season both sides of chicken with Italian seasonings, garlic, salt & pepper. Heat oil in a skillet, and sear chicken breasts over medium-high heat until slightly browned on both the sides and cooked through (about 5 minutes each side), do not over cook! Remove from pan; set aside and allow to rest.
Meanwhile combine the tomatoes, olives, red onion, basil and olive oil in a bowl to make the Bruschetta, season with salt & pepper. Top each chicken breast with the bruschetta mixture and serve immediately while warm, drizzle with your favorite balsamic vinegar and top with shaved Parmesan cheese if desired.

As pictured under the chicken I used about a cup of saffron rice (prepared as directed) and a dollop of spicy seasoned sour cream on top❤️ Try anything you love you can’t mess it up…Enjoy!
