Pasta with Peas (Pasta e piselli)

IMG_3839IMG_3840I know I could have made a more sophisticated meal with those deliciously plump peas that I just picked but I kept going back to my grandmother’s kitchen in my mind. Remembering as I shelled the Peas at her kitchen table, she was at the stove cooking up this dish quickly so we could eat it for dinner, so we could share their freshness, so we could talk about our afternoon😁 I cherish these memories and time spend with my grandma and I wish for you such happy memories! Go ahead and try this simple authentic Italian dish, you’ll love it❤️

 

Recipe:

1 small onion, chopped small
2 cloves garlic, chopped small
Salt and pepper
Olive oil
1 cup Fresh Snap Peas (approximately)
1/2 lb ditalini pasta (approximately)
Saute chopped onion and garlic in olive oil, seasoning with salt and generous amounts of pepper till they begin to soften. Now add the shelled peas to the onion mix, saute for a minute or two longer till all have softened. While simmering add in tablespoons of water from time to time to keep the veggies wet and avoid their browning.

In another pot boil ditalini Pasta in well salted water and cook as directed till al dente. Drain once pasta is done, reserve out about 1 cup of pasta water and set aside. Add pasta to onion, pea mixture and allow them to simmer together for just a bit, adding alittle of the pasta water at a time if pasta becomes dry for your taste, then take off of heat, cover for a few minutes to allow the flavors to meld. Serve immediately garnished with additional freshly ground pepper and grated cheese❤️ Enjoy!
