Meeting Lidia Bastianich and making her recipe of Pasta con Gamberi e Zucchine…Such a thrill❤️





I have been a longtime fan of this lovely lady and her PBS cooking show. I’ve collected all her cook books and even have a few of her recipes ingrained in my memory! But nothing compares to watching her cook in person, listening to her speak about her life, her family and her food. That soothing voice with her delightful Italian accent was mesmerizing and I was thrilled to be there! My Darling husband made the arrangements for us to be at her culinary show in Downtown Buffalo  during the “Taste of Buffalo”, knowing that I’d love it! He was so right, a glorious sunny day, an outside venue and a pasta lunch with an idol of mine, made my whole day perfect😁 I even was able to visit with her for a few minutes about Eataly in NYC and she graciously autographed my new cookbook from there… A Good Day!! So yesterday in honor of my new friend Lidia Bastianich I made her simple but delicious pasta dish… Pasta con Gamberu e Zucchine ( Shrimp & Zucchini ) It was my pleasure❤️


1/2 teaspoon salt

About a 1/4 cup extra virgin olive oil, plus more for drizzling

1 med. onion, sliced

1 jar of Lidia’s Marinara Sauce

3 medium Zucchini, cut into matchsticks

pinch of red pepper flakes

1 lb. of Lidia’s Penne Pasta

1 lb. large fresh shrimp, peeled and deveined

1/2 cup loosely packed fresh basil leaves, rough chopped

1/2 cup grated Parmesan cheese

Bring a lg. Pot of salted water to a boil for the pasta. To a a lg. skillet over med. heat, add about 3 tablespoons of the olive oil. When oil is hot, add the onions and cook until wilted, about 5 mins. then add the zucchini and season with salt and red pepper flakes. Cover and cook until the zucchini has wilted a bit, about 3 mins.

When you uncover the zucchini, add the pasta to the boiling pot of water! Raise the heat under the zucchini to med. high and add in the jar of marinara sauce, a 1/2 cup of the pasta water and more of the olive oil, let cook for about 5 mins. Now add in the Shrimp and Basil, toss till the shrimp is just cooked through and turn heat down to simmer for about 3 mins more while the pasta finishes cooking.

When pasta is al dente,  remove from the water with a hand strainer and place directly into simmering sauce. Drizzle with more olive oil and toss to coat the pasta with the sauce. Remove the skillet from the heat, sprinkle with grated cheese, toss a little and serve immediately! Bravo🤗

    YUM YUM! And so simple! How exciting that you were able to meet Lidia! That husband Paul is so sweet and thoughtful! My Mom turned me to Lidia several years ago……we both love her to pieces. My Mom was always cooking something that Lidia cooked on her show. And for Mom that was in the days of no computers and websites, so she would bring her tablet in the den and write everything down “LIVE.” And WA-LA, the history of recipes evolved! You gotta love that! This recipe is definitely on my list to make Cugina! Lucky Girl~
