Cream of Broccoli Soup

IMG_3822IMG_3821 Just a quick and delicious way to use leftover Broccoli 😄 I forget sometimes when I’m cooking that I am not feeding a room full of people anymore.  My daughters & their families are not close by to come over and eat them up so we always have a lot of leftovers, someday I’ll remember that!! But for now thank goodness My Darling husband likes to eat leftovers cause everyday he eats them for his lunch❤️ Love you Babe, Enjoy!

 

1 lg. Bunch of Broccoli (crowns or with stems), but all cleaned,  trimmed and roughly chopped

2 tablespoons butter

2 cups milk

1 16oz carton half & half

3 tablespoons of flour

I heaping tablespoon of chicken soup base/ bouillon

Salt & Pepper

Cheddar cheese

Steam Broccoli till fork tender and drain, set aside.

Whisk or shake milk, half & half and flour together till smooth. Meanwhile melt the butter on med low in a saucepan and slowly add the milk mix into the pan with the butter, stirring constantly till it thickens. Once thickened add in chicken soup base plus some salt & pepper, stir to combine and make sure its taste is to your liking. Now add in the chopped cooked Broccoli and stir all together, then with an emersion blender blend soup till smooth, season with more salt & pepper if needed, heat through on low and garnish with cheddar cheese and a drizzle of olive oil😍

    I have all the ingredientces except the half and half. I will purchase that tomorrow and make your recipe for Broccoli Soup. Can’t wait, yum!

      Good Luck Mom and let me know how it comes out! If you don’t have a stick blender, you can mash the cooked Broccoli with a potato masher, it won’t be as smooth just a little more chunky but will taste just as delicious!
