Those of you who know me, know that I love rotisserie chicken and the simplicity of having a ready made meal quickly when time is short and everyone is hungry☺️ But there is so much more you can do with the chicken…casseroles, sandwiches, soups & salads just to name a few. So since this year I have an abundance of Basil I decided to make a creamy dressing with it and pair it with my leftover chicken, threw in a crisp chopped apple and “VOILA” you have an Italian style chicken salad! It was delicious!!!
Leftover Rotisserie chicken, cut up into chunks, using both white and dark meat
salt and pepper to taste
1 cup mayonnaise
1 cup chopped fresh basil
2 cloves chopped garlic
3 tender stalks of celery, chopped
1/3 cup grated Parmesan cheese
1 sweet crisp Apple, chopped
Chunk chicken and season with salt and pepper to your taste.
Now in a food processor, puree mayonnaise, basil, garlic and celery till smooth.
Fold together the chunked chicken, pureed mayo dressing, chopped Apple and Parmesan cheese till all is coated. Refrigerate! Serve with a garlic knot roll and/or some cold fresh fruit, you’ll love it❤️
