While I was resting at home one day I decided to make pasta quickly because I had a craving. So I took out my food processor and my pasta attachments and got to it!! Cutting the pasta sheets into wide strips and combining lots of fresh garden veggie favors … this is what came out! It was awesome❤️
1 lb homemade pappardelle pasta (any Thick pasta will do really)
6 slices of bacon, cut into 1″ pieces
4 garlic cloves, chopped
1 pint ripe garden fresh grape tomatoes
1 bunch of fresh washed spinach
1/3 cup crumbled goat cheese
extra-virgin olive oil
salt & freshly ground black pepper to taste
1/4 cup fresh basil leaves, julienned
About 2 tablespoons pine nuts
Cook pasta till al dente.
Meanwhile, arrange bacon pieces in a deep sauté pan and Cook until browned and slightly crispy on the edges, then when done, drain off all but about 2 tablespoons of the bacon fat.
Place pan back on burner with burner turner off. Now add in chopped garlic and tomatoes. Cover and keep warm until pasta is ready, this will slightly cook the tomatoes without them getting to mushy.
When the pasta is al dente, drain and add it to the tomato mixture.
Turn burner back onto low, then add in the spinach and goat cheese. Drizzle with olive oil and add salt & pepper to taste. Toss to combine as the goat cheese slightly melts and the spinach wilts, then remove pan from the heat. Transfer to a serving dish and Garnish with the basil and pine nuts! Mangia❤️
