This recipe has a lot of versions but this is the one I have made most often with leftover chicken or turkey for some time! I’ve had requests to write it down many times but it seems to change with each dinner😌 So since I just made it for tonight’s dinner I decided to write this version down for all of you that have asked, you can make it your own and add to it what you like or what you have leftover… Serve it over hot brown rice and whole cranberry sauce on the side! It’s just warm, gooey and yummy 😋
Leftover Chicken or Turkey, cut in chunks (enough to fill bottom of baking pan)
6 to 8 Slices Swiss Cheese (plus more if you like)
1 can Cream of Chicken Soup
¼ cup milk
Leftover Stuffing (enough to cover top of chicken mixture)
For ontop, sm amts. of panko breadcrumbs to sprinkle and ¼ c butter, melted to drizzle over all.
Cover bottom of pan with chicken or turkey.
Lay Swiss Cheese over chicken.
Mix 1 can cream of chicken soup and ¼ cup milk.
Pour mixture over chicken, at this point I sometimes put alittle more cheese ontop of the soup mix.
Now top all with the leftover Stuffing, sprinkle with alittle seasoned panko breadcrumbs and drizzle melted butter over top.
Bake at 350 for 40-45 minutes till bubbly and slightly browned.
While Casserole is baking, prepare rice as directed and once the chicken is done, serve hot over the rice. Enjoy❤️
