An easy, delicious dinner you can have ready in minutes. I really am all about flavors and these go together so well! It can be eaten slightly warm right after you put it all together or cold from the refrigerator no matter when; summer, winter, spring or fall … sweetness is welcome always ♥️ I’d love for you to take the time to share with me your thoughts. Mangia!

12 ounces bowtie pasta noodles
4 overflowing cups of spinach leaves
½ cup craisins (more if desired)
⅓ cup cashews (more if desired)
1 15oz. can mandarin oranges, drained

The Dressing;
⅓ cup teriyaki sauce
⅓ cup Apple cider vinegar
½ teasp. garlic powder
½ teasp.  onion powder
salt & black pepper, to taste
1 heaping tablespoon sugar
½ cup olive oil

Cook pasta as directed, drain and rinse slightly then set aside.
While pasta is boiling you can be preparing the dressing… Combine in a mason jar all the dressing ingredients, Cover and shake vigorously. Chill until you’re ready to use.
In a large serving bowl toss together pasta, spinach, craisins, nuts and mandarin oranges. Just before you are ready to serve pour dressing over salad, toss and serve. Enjoy it as a side dish or even as your entree with some nutty whole grain toasted bread 😊

    We had this salad for dinner … and then for lunch … it is a refreshing, spirited and inviting way to bring “sunshine and spring” to an otherwise wintery evening. By itself, it will brighten your life – with your loved one, it’ll inspire. Delicious. Enjoy!
