Spaghetti and Meatball Soup

This recipe has become a favorite of mine through the years, I learned about it from a friend long ago who was trying to get her children to try and eat soup. Being Italian she knew they loved spaghetti and meatballs so she turned it into a soup for them…needless to say it was a hit and both our families still have a love for all kinds of soups. 🍝 It really is a very versatile soup so make it your own❤️

RECIPE:

3 garlic cloves, chopped

3 tablesp. olive oil

3 tender stalks of celery with leaves, chopped

6 cups water

1 15oz can diced Italian seasoned tomatoes with their juice

1 tablesp. dried Italian seasonings

2 tablesp+ Chicken soup base or stock to taste

salt and pepper to taste

1/2 lb long spaghetti pasta noodles, broken up

15 to 20 small homemade meatballs (you can also use thawed small frozen meatballs)

In large soup pan heat olive oil, add garlic and celery, saute till fragrant and slightly softened. (do not burn)  Now add water, soup base, diced tomatoes, meatballs and seasonings to taste. Bring to a boil then reduce heat and let simmer for 20 mins to let flavors combine. Lastly add broken up pasta and let it high simmer till pasta is soft and taste is to your liking about 20 more mins. (If soup becomes to thickened for you just add extra chicken broth to thin) Garnish with grated Parm cheese and a drizzle of olive oil!! Enjoy❤️
