Mom’s Zucchini Pie

imageMy mom made this pie with fresh veggies out of the garden when I was a teen, I think of those beautiful summer days whenever I make this… I always found it to be such comfort food, I hope you like it as much as I do❤️

RECIPE:

3 small zucchini – sliced and cut into small chunks

1 med. onion- diced

4 eggs

1 cup of Bisquick (add more Bisquick 1/4 cup at a time if mixture is too loose)

1/2 teasp black pepper

1 teasp salt

1/2 teasp garlic powder

1/4 cup of grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1/4 cup oil

1 teasp dried parsley flakes

    I have never tried this, but I will! Honestly, when I was still growing veggies, I grew zucchini just for the fried blossoms, which my daughter is doing right now!
